KALA bakes the Okanagan's croissants the slow way — real butter, folded and laminated by hand in Vernon, BC, 40 minutes north of Kelowna on Hwy 97. They come out of the oven every morning; when the day's batch is gone, it's gone.
A croissant is mostly patience. The dough is laminated — butter folded into it layer over layer — then given time to rest between every turn. Rushed lamination gives you bread in a costume; given time, it gives you shatter, honeycomb, and that pull only real butter makes.
We bake a short list and bake it properly: butter croissants, pain au chocolat with two dark batons, almond croissants filled with frangipane. Morning is croissant time at KALA — order ahead and yours comes out of the case, not from under a heat lamp.

What time do croissants come out of the oven?
The first bake is ready when we open — 6:30 AM on weekdays, 7 AM on weekends. Mornings are the best time; the day's batch sells through.
